Internship Update 3/29/21
I just finished my Community rotation of the Delicious Living Nutrition Dietetic Internship, which means I’m a quarter of the way through the program. Time flies! My community rotations sites / organizations included Cape Wellness Collaborative (1 week), Barnstable County Cooperative Extension (3 weeks), Family Pantry of Cape Cod (1 week), and Truro Community Kitchen (2 weeks).
My main takeaways:
Nutrition education is needed and wanted. Most people think of fad diets and marketing gimmicks when they think about nutrition.
Nutritious food should be affordable. There are many people who are food insecure. In that position, their first priority is to have something to eat, rather than considering the nutritional value of the food.
Those of us with the luxury of picking anything we want in the grocery store, not worrying about the cost, should be humbly appreciative of God’s provision in our lives. Furthermore, we should look for a way to serve the orphan and the widow.
My next three rotations will be Agriculture, Foodservice, and finally Clinical. The internship will end in October and then I’ll sit for the exam to be licensed as a Registered Dietitian Nutritionist. I then plan to start a private dietetic practice in central Virginia, and continue coaching wrestling.
Aside from the internship, Caty-Scarlett and I have had fun exploring the Cape. We live right next to the Shawme-Crowell State Forest, which I fondly refer to as my “backyard” for trail running and mountain biking (check out my Strava https://www.strava.com/athletes/45690167). I’ve been honing in my cooking, baking, and sprouting skills. I’ll definitely want to share some resources soon including how to make homemade hummus and crackers.
